I think I'k officially a food blogger. I made myself this balsamic salmon with Brussels sprouts and farro bowl for luncheon.

I mean… who does that? Who eats dejeuner similar this in the middle of the week?

Me, apparently.

I work from home for my full-time job and my kids are in preschool in the mornings. I have them with me in the afternoons (while I'one thousand all the same working) then except when they take a niggling nap, I'm usually juggling half a dozen things that demand my undivided attention.

You lot do the math on that 1…

And then dejeuner? It'southward commonly a very simple, grab what I can, when I can and more often than non, it happens at three:00 when my daughter comes downstairs for snack. Late lunch indeed.

So how did this seemingly elegant, leisurely luncheon come to laissez passer?

I spied this salmon at the grocery store and I literally could non resist.

(Salmon is my favorite fish. Easy BBQ salmon and southwest baked salmon are some of our go-to ways to make it.)

Seriously, I was at the counter getting chicken breasts and pork chops and I glanced over and saw this, the nigh perfect piece of salmon. I tried to wait away. I tried to focus on my listing. I tried to make sure my kids weren't falling out of the cart.

Simply all of that melted abroad and all I could see was this salmon.

The man handed me my other appurtenances and asked if that was all. I said yes. Then I immediately said no. And I watched with excitement as he wrapped this lovely salmon up for me.

So the adjacent day for lunch, I spent a few minutes getting this balsamic salmon and Brussels sprouts prepped and popped it in the oven before getting on a briefing call. (Farro going on the stove too.) Real life doesn't really become put on pause for perfect salmon, sadly.

Also, I'm all near multi-tasking.

I got off my call and polished off this delightful bowl of balsamic salmon with Brussels sprouts and farro in no time.

And then I made it for dinner the adjacent week. #notcompletelyselfish Also, I was able to enjoy it with some wine that time around and that just fabricated it all the more decadent.

I don't foresee this on my regular lunch-fourth dimension rotation, but I do programme to make it for dinner once again and again. And I hope you can spoil yourself with it at some meal in the near future. Also, I wish you salmon as plump and perfect as I stumbled across. 😊

Ingredients

For the salmon:

  • 4 (5-6 oz.) pieces of wild salmon filets
  • ane/two teaspoon table salt
  • i/4 teaspoon black pepper
  • two teaspoons olive oil
  • 2 teaspoons balsamic vinegar

For the Brussels sprouts:

  • ane (1 lb.) parcel of Brussels sprouts, done, trimmed and outer leaves removed - likewise, cut whatsoever medium or large sprouts in half or fourths so they're all the same size
  • 2 teaspoons olive oil
  • two teaspoons balsamic vinegar

For the farro:

  • 1 (8-9 oz.) package of quick-cooking farro (I buy the 10-minute farro at Trader Joe's)

Instructions

  1. Preheat oven to 400.
  2. Place salmon filets skin-side down on a large piece of aluminum foil. Sprinkle evenly with common salt and pepper, then drizzle with olive oil and balsamic vinegar. Fold up the sides of the aluminum foil to make foil packets and seal and crimp the tops, so the salmon is enclosed. Fix aside.
  3. On a large baking sheet, toss the Brussels sprouts with olive oil, balsamic vinegar, salt, pepper and carmine pepper flakes. Spread them out evenly effectually the edges of the baking sail.
  4. Place the salmon foil packet in the middle of the baking canvas.
  5. Roast at 400 for twenty minutes. (Come across notes.)
